Like over 100 degrees.
Five small degrees off from last year's record breaking temperature of 105.
Too hot to turn on the oven.
But I did and I was miserable and dinner tasted like crap.
Today it rained, so it was much cooler, but I was apprehensive about cooking another gross dinner and almost allowed my more impulsive side win out when it came to be dinner time.
Lucky for me, Ben took the initiative to go preheat the oven and bake a frozen pizza. I was expecting the same old icky frozen pizza crap but was pleasantly surprised with our DiGiorno pizza. It was probably the best frozen pizza I've ever had.
But there wasn't much of it. So for dessert I wanted something really, really good. And I didn't want to have to turn the oven back on. So I made up a no-cook peach cobbler. And it was so good, I'm sharing it with you.

There are only three ingredients in this. That may be one of the best gifts I can give you. And it's individual serving size, so don't even think of trying to share. This one is just for you.
You need one of those tiny snack cans of peaches, one block of cinnamon graham crackers, and some heavy cream.

First, drain what seems like all of the juice out of your peaches. Do this by letting it strain through the cracked lid. No need to get out any special equipment. This is supposed to be fast and easy. And not hot.
Then put the peaches in your single serving-sized bowl. See, there is lots of yummy juice left.

Next, pour about a tablespoon or so of cream on top of the peaches. Just enough to really mix in there.

Next, crumble your cinnamon graham on top of your peaches and cream.
If, like me, you encounter some grahams that are bordering on the soggy/stale side, you can just heat them in the toaster oven for about 90 seconds to crisp it back up. But seriously - keep an eye on that thing. The cinnamon sugar will burn and then your house will stink. Not that I know that from experience or anything.

Finally, scoop up big, giant spoonfuls of this goodness and put it in your no-bake peach cobbler hole.
If you don't have cream, a scoop of vanilla ice cream could also work, but that's for the really ambitious among you.

That sounds really good. I need individual size desserts, b/c I tend to be the only one to eat them around here and then I eat the whole darned thing. Not helpful to the post pregnancy weight loss plan!
YUM! I'm so going to try that this weekend. Except I plan to use a MUCH bigger serving bowl than the one pictured ; )

I do so tire of these Georgians thinking they're the 'Peach State' when we all know good and darn well it's the neighbor to the east who rules the Peach roost!
Mom brought some good old Greer peaches and I had forgotten how much I miss those until I had them again. These scrawny Georgia things just don't compare!!!
OK - so get this - now some kid in L'il Vinegar's school is allergic to peaches and no one in the whole damn school can bring them in their lunch!
SERIOUSLY??? I found this out yesterday after I bought a buttload of (albeit Georgia) peaches to make your yummy cobbler-ette and wanted to send some in her lunch!
